Arugula salad with cherry tomatoes and Katiki cheese from Domokos

A fresh and healthy salad

The Katiki cheese from Domokos with its rich flavour and the sweet cherry tomatoes blend with vinegar and oil and balance perfectly with the peppery taste of arugula. A tasteful and refreshing salad.

Serves: 4-5  Preparation time: 20m  Cooks in: 0m  Ready in: 20m

Ingredients
3 bunches arugula
15 cherry tomatoes
150g Katiki cheese from Domokos
1 ½ espresso cup of olive oil
2 tbsp. vinegar
2-3 tbsp. olive oil for garnish
salt

Method
Step 1
Fill a saucepan with 500 ml of water and when the water starts boiling add the tomatoes for 1 minute to soften their skin. Let them rest in a colander, peel them and cut them in half. Then put them in the fridge.

Step 2
Wash the arugula and keep only the soft leaves and cut them using your hands. Put them in a large bowl, add salt, pour the oil and vinegar and stir gently. Spread on the top the tomatoes, add some salt and the Katiki cheese from Domokos with a teaspoon.

Step 3
Pour the remaining oil and serve the salad.
